Which dimmer is compatible with the 5mm 24V IP20 LED strip to switch it on and off and adjust the brightness?

You can use a 12V/24V LED dimmer to control this strip: it is available in a white version and a black touch version, both compatible with a 24V power supply.

What power supply is needed to run the full 5 metres?

This strip operates on direct current (DC) at 24V and consumes 40W over 5 metres, which is 8W per metre. You will therefore need a 24V DC power supply with a minimum output of 40W, adding a safety margin of approximately 20% as recommended for this type of application.
